Banana Pancake

 One of my all time breakfast dish, Banana Pancakes. Once you know how to make these pancakes the options are endless and you imagination is the limit! A simple and easy recipe to make your breakfast fast :)

Ingredients:

  • 1 Ripe Banana
  • 1 Egg [Optional]
  • 2 Tablespoon of Milk
  • 2 Tablespoon of sugar
  • 2 Tablespoon of raw sugarcane sugar
  • Salt to taste
  • 1 cup of All purpose flour/Wheat flour
  • 1/4 teaspoon of Baking powder and Baking soda
  • Chopped Walnut [Optional]

Preparation Method:

Step1. Mash the Banana into a fine paste 
Step 2: Add Egg, Sugar, cane sugar, Milk 

and mix till all the sugar is mixed well.


 Step 3:  Once wet ingredients are fully incorporated set it aside. In a separate bowl mix the chosen flour of your liking with Baking powder, baking soda and salt.
Step 4: Add the dry ingredients to the wet ingredients and mix just enough to get the flour mixed. Mixing longer will make pancake flat.
Tip: If the mix gets thicker add a splash of milk and mix it. looking for a not too thick or too thin. a tiny bit tin than cake batter.
Optional Step: One pancake batter is ready, mix in your choice of chopped nuts, I've added Walnuts.
Step 5: Important step. Let the batter rest for 10 minutes.


Step 6: Heat the skillet to a medium high and add butter, once butter foamed ladle the pancake batter and reduce the heat. 
Tip: Cooking time for pancake varies with the pan, heat and consistency of the batter. So don't time the cooking look for the clues of doneness. Here we are looking for small bubble forming at the top and pancake expanded. Then flip the pancake and cook for the same amount of time as the first side.
Fluffy and tasty Banana pancake is ready, Enjoy with Maple syrup or vanilla ice cream or Nutella. Happy Cooking! 


Other options that you can try
1. Before the first flip add chopped dark chocolate or blue berries.
2. No banana - no worries make pancake without banana that will be your classic pancakes
3. Want colorful Pancakes - swap banana with Raspberry for pink pancakes, Blue berries for blue pancakes.

  2. The recipe you shared here seems not only yummy but also very healthy. Banana, eggs are already at healthy sides and I guess it will taste the same if I replace sugar with brown sugar or date sugar. Pancakes are good option to give kids like finger foods after cutting them into strips or after making rolls. Many times I experiment a lot and it turns up very bad and yes sometimes I succeed. There is a very popular sweet treat in Indonesia with name'Martabak Manis'. Many kids love Martabak Manis, a very thick "pancake" with the traditional filling are chocolate sprinkle, crush peanut, sesame seed, condense milk combine in one or cheese, and condense milk. This recipe is a little bit tricky so I didn't dare to try it. But surely I am going to try your recipe, thanks for sharing.
